There are three capacities available in bottles of 500, 250 and 100 ml and three types of extra virgin proposals, each with distinct qualities that make them unique, recognizable, to suit different uses and culinary attuned to every palate.

- Late collection: made from 15 November to 15 December, in a period when the olives are at a higher stage of maturation and are capable to give greater sensitivity to the oil, and a fruity and soft bouquet. It’s an oil of great elegance and balance, to the nose offers aromas of herbs and tomato with notes of sweet almond, whereas the bitter and spicy are more subdued. It is ideal with soups, baked and marinated fish, delicate risotti.
- Early harvest: starts around October 15 and ends in early November. When the oil begins to take the purple color and gives a more intense and pungent oil. Product of great balance, to the nose donates very strong hints of herbs, tomato and apple green while the bitter and spicy are more present and enveloping. It is ideal with salads of mushrooms, grilled meat and fish, steak tartare.

Maeta – Itrana Monocultivar Must
Yellow-green and a strong scent are the salient features of our extra virgin olive oil Mosto Itrana Monocultivar Maeta, a valuable and particular product. One of the rare examples of products with a single cultivar of olive, it develops a fruity flavour, slightly bitter and spicy with notes of green tomato and herbs.
Maeta is an oil with low acidity (oiliness average 16%). Our olives are picked and selected by hand and pressed between mid-October and mid-November, with an earlier harvest compared to the canon, to ensure excellent quality and maximum intake of polyphenols.
It is an oil must for true gourmets in limited production, with only 400 numbered bottles and packaged by hand.
